The innovation introduced by Puleo S.p.A through the Infinity System is based on the idea of pressing under a protected atmosphere, without quantitative limits of inert gas, towards a more performing and advanced perspective.
The particularity behind the new concept is the capability of the Infinity press itself of drawing inert gas (namely Nitrogen) independently, through straight molecular splitting, from atmospheric air and make it available during the various processing cycles. The nitrogen captured is managed independently by the system in order to neutralize the pressing environment and to favor a fast and constant drainage of the musts, from the first stage of the press loading.
The new INFINITY system ensures unlimited availability of new nitrogen, without any need for recirculation and storage systems that could make it a vector of pollution due to unwanted parts released during pressing. The pressurized nitrogen that enters the pressing chamber for each cycle, in addition to carrying out suitable inerting, favors a continuous and greater draining compared to classic pressing systems, with excellent results in terms of yield and quality of the extracted product, while the depressurization which the same gas is subject to, by entering the processing chamber, creates the condition for an environment with decreasing temperatures.
PREXA N, being a hybrid press, as well as operating in the INFINITY SYSTEM MODE, can work in:
CLASSIC MODE (PREXA C)
Its principle of operation is based on that of pneumatic presses with closed tank. The grape must is extracted from inner draining gutters and comes out of nozzles into an external collection tray.

Automated washing system
The fully automated washing system of draining gutters through water recirculation allows an accurate and fast cleaning of all those parts that get in touch with the must and prevents water wastage: upon starting it, the Press automatically rations the strictly necessary amount of water, while the pump on board lets the water recirculate through the circuit for the set time. At the end of the process waste-water is discharged.
